- Large yellow or sweet onions
- Almond flour or crushed pork rinds
- 2 eggs

Instructions
- Preheat your oven to 400°F (200°C).
- Peel and slice your onions into thick rings (about ½ inch wide).
- In one bowl, whisk together the eggs. In another, mix the almond flour or crushed pork rinds with the spices.
- Dip each onion ring into the egg mixture, allowing excess to drip off, and then coat in the flour mixture.
- Place the coated rings on a parchment-lined baking sheet in a single layer and spray lightly with oil.
- Bake for about 15-20 minutes, flipping halfway through, until the onion rings are crispy and golden brown.
- Let them cool slightly before serving.
Notes
For extra crunch, consider double-coating the onion rings. Avoid using too much egg mixture to prevent sogginess.
