Ingredients
- Pasta (fettuccine, penne, or bowtie)
- Smoked sausage (Andouille or Italian)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup chopped onions
- 1 cup chopped bell peppers
- 3 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Fresh parsley for garnish
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain.
- In a large skillet over medium heat, add olive oil if necessary, then cook the sliced sausage until browned, about 5-7 minutes.
- Add chopped onions and bell peppers to the skillet, cooking until softened. Add garlic last to avoid burning and stir until fragrant.
- Pour in the broth, scraping any stuck bits from the pan, then add cream and spices, letting it simmer for 5-7 minutes on low heat.
- Mix in the cooked pasta, adding reserved pasta water as needed to reach desired sauce consistency.
- Stir in grated Parmesan and adjust seasoning with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
Feel free to substitute turkey sausage for a lighter option or add leafy greens like spinach for extra nutrition.
