Ingredients
- 1 pound ground pork
- 1 cup fresh cranberries
- 1/2 cup breadcrumbs
- 1 egg
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (parsley, thyme, or sage)
- 1 tablespoon sugar
- 1/4 cup orange juice
Instructions
- Prepare the Cranberry Sauce: In a saucepan, combine fresh cranberries, a dash of sugar, and a splash of orange juice. Cook for about 10 minutes until cranberries burst. Set aside to cool.
- Mix the Meatball Ingredients: In a bowl, combine ground pork, breadcrumbs, diced onion, minced garlic, egg, salt, pepper, and herbs. Mix gently.
- Form the Meatballs: Use wet hands to form the mixture into 1-inch meatballs. Place on a lined baking sheet.
- Cook the Meatballs: Preheat oven to 400°F (200°C). Bake for 20-25 minutes, turning halfway through until golden brown.
- Combine with Sauce: Add cooked meatballs to a pan, pour cranberry sauce over, and gently stir to coat. Simmer for 5 minutes.
- Serve and Enjoy: Remove from heat and serve warm, garnished with fresh herbs if desired.
Notes
For added flavor, sauté chopped mushrooms in the pan before adding meatballs.
