A delightful blend of crispy churros and creamy ice cream, perfect for family gatherings and celebrations.

Ingredients

  • 1 batch homemade or store-bought churros
  • 2 cups vanilla ice cream
  • 1 tsp freshly ground cinnamon
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 large eggs (for homemade ice cream base)

Instructions

  1. Prepare the churros by mixing flour, baking powder, sugar, and cinnamon. Add hot water to form dough, pipe and fry until golden, then roll in sugar and cinnamon.
  2. If making the ice cream base, whisk together heavy cream, milk, and sugar in a saucepan over medium heat until sugar dissolves. Allow to cool slightly.
  3. Chop churros into bite-sized pieces and fold into the softened ice cream or pour the cooled ice cream base into an ice cream maker.
  4. Churn according to manufacturer’s instructions or return the mixture to the freezer to firm up for a couple of hours.
  5. Scoop into bowls and top with extra churro pieces or cinnamon sugar.

Notes

For a lighter version, substitute heavy cream with coconut cream and use lower fat milk. Serve with fresh fruit or drizzle warm chocolate sauce for extra indulgence.
