Ingredients
- 1 batch homemade or store-bought churros
- 2 cups vanilla ice cream
- 1 tsp freshly ground cinnamon
- 1/2 cup granulated sugar
- 1 cup heavy cream
- 1 cup whole milk
- 2 large eggs (for homemade ice cream base)
Instructions
- Prepare the churros by mixing flour, baking powder, sugar, and cinnamon. Add hot water to form dough, pipe and fry until golden, then roll in sugar and cinnamon.
- If making the ice cream base, whisk together heavy cream, milk, and sugar in a saucepan over medium heat until sugar dissolves. Allow to cool slightly.
- Chop churros into bite-sized pieces and fold into the softened ice cream or pour the cooled ice cream base into an ice cream maker.
- Churn according to manufacturer’s instructions or return the mixture to the freezer to firm up for a couple of hours.
- Scoop into bowls and top with extra churro pieces or cinnamon sugar.
Notes
For a lighter version, substitute heavy cream with coconut cream and use lower fat milk. Serve with fresh fruit or drizzle warm chocolate sauce for extra indulgence.
