- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup chopped nuts (pecans or walnuts)

- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In another bowl, whisk together flour, oats, baking soda, baking powder, and salt. Gradually incorporate dry ingredients into wet ingredients.
- Stir in your chosen mix-ins (chocolate chips, nuts, dried fruits).
- Drop rounded tablespoons of dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes or until edges are lightly golden and centers are soft.
- Let cookies cool on baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Store in an airtight container for up to one week.
Notes
Feel free to customize with your favorite mix-ins. Chilling the dough for 30 minutes can help prevent spreading.
