Ingredients
- 8 oz high-quality dark chocolate (at least 70% cocoa)
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup heavy cream
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- In a heatproof bowl, combine chopped dark chocolate and cubed butter. Melt together over a pot of simmering water, stirring until smooth.
- In a separate bowl, whisk together the sugar and eggs until pale and fluffy.
- Gradually pour the melted chocolate mixture into the egg mixture, stirring gently to combine. Add the vanilla extract.
- Pour the batter into your prepared pan and bake for 25-30 minutes. The cake should still be slightly soft in the center.
- While the cake cools, heat heavy cream until steaming, then pour it over additional chopped chocolate in a separate bowl. Stir until smooth and glossy.
- Once the cake is cool, pour the ganache over the top, letting it drip down the sides. Garnish with chocolate shavings or fresh berries.
- Let the cake set in the fridge for at least an hour before slicing.
Notes
For a dairy-free version, swap butter and cream for coconut oil and coconut cream. Use egg substitutes for a vegan option.
