Ingredients

  • 8 oz high-quality dark chocolate (at least 70% cocoa)
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a heatproof bowl, combine chopped dark chocolate and cubed butter. Melt together over a pot of simmering water, stirring until smooth.
  3. In a separate bowl, whisk together the sugar and eggs until pale and fluffy.
  4. Gradually pour the melted chocolate mixture into the egg mixture, stirring gently to combine. Add the vanilla extract.
  5. Pour the batter into your prepared pan and bake for 25-30 minutes. The cake should still be slightly soft in the center.
  6. While the cake cools, heat heavy cream until steaming, then pour it over additional chopped chocolate in a separate bowl. Stir until smooth and glossy.
  7. Once the cake is cool, pour the ganache over the top, letting it drip down the sides. Garnish with chocolate shavings or fresh berries.
  8. Let the cake set in the fridge for at least an hour before slicing.

Notes

For a dairy-free version, swap butter and cream for coconut oil and coconut cream. Use egg substitutes for a vegan option.
