Ingredients
- 1 lb boneless chicken (breast or thighs)

- 1 cucumber, diced
- 2 tomatoes, chopped
- 2 cups lettuce, shredded
- 2 cups cooked rice or 4 pitas
- 1 lemon, for juicing
Instructions
- Marinate the chicken in a bowl with olive oil, minced garlic, cumin, and paprika for at least 30 minutes.
- Preheat grill or skillet to medium-high heat and cook marinated chicken for 5-7 minutes on each side until cooked through.
- Prepare the tzatziki sauce by mixing Greek yogurt, diced cucumber, garlic, dill, and lemon juice.
- Let the chicken rest before slicing into bite-sized pieces.
- Assemble the bowls with grains or pita at the base, topped with chicken, fresh veggies, and tzatziki.
- Finish with fresh herbs and a squeeze of lemon.
Notes
Allowing the chicken to marinate longer enhances flavors. Searing creates a beautiful crust for juiciness.
