Ingredients
- 1 cup dried cherries, chopped
- 1/2 cup bourbon
- 1 cup semi-sweet chocolate chips
- 1/2 cup pecans, finely ground (or walnuts/almonds)
- 1/4 cup corn syrup (or honey)
- 1 cup powdered sugar
Instructions
- Chop the dried cherries into small pieces.
- In a large mixing bowl, combine chopped cherries, bourbon, and ground nuts.
- In a microwave-safe bowl, gently melt the chocolate in small increments, stirring often.
- Stir in corn syrup and powdered sugar into melted chocolate until fully incorporated, then add cherry-nut mixture.
- Roll the mixture into small balls, about 1 inch in size.
- Roll each ball in powdered sugar until evenly coated.
- Chill on a parchment-lined tray for at least two hours before serving.
Notes
Use good quality bourbon and chocolate for the best flavor. Adjust sweetness as desired before rolling into balls.
