Ingredients
- 2 cups fresh blueberries
- 1 cup Greek yogurt (or flavored yogurt)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Optional toppings: crushed nuts or shredded coconut
Instructions
- Wash the fresh blueberries gently. If using frozen, let them sit out for a few minutes until slightly thawed but still firm.
- In a large bowl, combine yogurt, sweetener, and vanilla extract until well blended. Adjust sweetness according to your liking.
- Add blueberries to the yogurt mixture and gently fold until evenly coated.
- Drop clusters onto a parchment-lined baking sheet, spacing them apart for even freezing.
- Freeze for at least 120-180 minutes or until firm.
- Transfer frozen clusters to an airtight container and keep in the freezer for up to a month.
Notes
For easier scooping, keep the yogurt mixture cold. Try adding a zest of citrus or chopped herbs for a unique twist.
