Ingredients

  • 1 sheet puff pastry
  • 2 cups fresh blueberries (or thawed frozen blueberries)
  • 3 large eggs
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp cornstarch

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and transfer it to a parchment-lined baking sheet.
  3. In a medium bowl, whisk together eggs, sugar, and cornstarch. Gradually add heavy cream and vanilla extract, mixing until smooth.
  4. Gently fold in the blueberries, being careful not to break them.
  5. Pour the blueberry custard evenly over the puff pastry, leaving a small border around the edges. Fold the edges of the pastry slightly over the custard.
  6. Bake for 25-30 minutes or until the pastry is golden brown and puffed.
  7. Allow to cool for a few minutes, dust with powdered sugar, slice, and serve warm or at room temperature.

Notes

For a beautiful finish, brush a little melted butter over the crust before baking.
