Ingredients
- 1 sheet puff pastry
- 2 cups fresh blueberries (or thawed frozen blueberries)
- 3 large eggs
- 1 cup heavy cream
- ¾ cup granulated sugar
- 1 tsp pure vanilla extract
- 2 tbsp cornstarch
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and transfer it to a parchment-lined baking sheet.
- In a medium bowl, whisk together eggs, sugar, and cornstarch. Gradually add heavy cream and vanilla extract, mixing until smooth.
- Gently fold in the blueberries, being careful not to break them.
- Pour the blueberry custard evenly over the puff pastry, leaving a small border around the edges. Fold the edges of the pastry slightly over the custard.
- Bake for 25-30 minutes or until the pastry is golden brown and puffed.
- Allow to cool for a few minutes, dust with powdered sugar, slice, and serve warm or at room temperature.
Notes
For a beautiful finish, brush a little melted butter over the crust before baking.
