Ingredients

  • 3 ripe bananas
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup milk or buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar (for caramel)
  • 1/4 cup unsalted butter (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or two 9-inch round cake pans.
  2. In a bowl, mash the ripe bananas with a fork until smooth. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, ensuring each is fully mixed before adding the next. Stir in the mashed bananas and vanilla.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and a pinch of salt.
  6. Gradually combine the dry ingredients into the wet mixture, alternating with the milk until everything is just mixed—don’t over-mix!
  7. Pour the batter into your prepared pan(s) and smooth the top with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. While the cake cools, prepare the caramel. In a saucepan over medium heat, melt butter and brown sugar, stirring until dissolved and bubbling gently. Allow to simmer for 5 minutes.
  10. Once the cake is cooled, drizzle the warm caramel over the top.

Notes

Serve warm with whipped cream or vanilla ice cream for an extra treat. Substitute ingredients as needed for dietary preferences.
