Instructions
- Preheat the oven to 425°F (220°C).
- Slice each avocado in half and remove the pit, scooping out a little flesh to create space for the eggs.
- Arrange avocado halves in a baking dish, stabilizing them with crumpled foil or a muffin tin.
- Crack one egg into each avocado half. Season with sea salt, pepper, and herbs if using.
- Bake for 12-15 minutes or until egg whites are set and yolks are cooked to your liking.
- Garnish with desired toppings before serving.
- Serve immediately, ideally with toast or a fresh salad.
