- 2 cups corn (fresh or canned)
- 1/4 cup honey
- 1/4 cup melted butter
- 1/2 cup milk or cream
- 2 large eggs
- 1/2 cup flour or cornmeal
- 1 tsp salt
- 1/2 tsp black pepper
- Additional fresh herbs (like thyme or chives), optional
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the corn, melted butter, and honey. Stir until evenly mixed.
- Add the eggs and beat them lightly before incorporating into the mixture.
- Pour in the milk and mix well.
- Sift in the flour or cornmeal, followed by your chosen seasonings. Stir gently to avoid lumps.
- Spread the mixture into a greased baking dish.
- Bake for 45-55 minutes, until the edges are golden and the center is set.
- Allow to cool for a few minutes before serving.
Notes
For a crispy top, broil for a few minutes at the end of baking, watching closely to prevent burning.
