A comforting and hearty twist on traditional lasagna, this Crock Pot Lasagna Soup combines rich Italian flavors with creamy cheese and tender pasta.

Ingredients

  • 1 lb Ground Meat (Beef, Turkey, or Italian Sausage)
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cans (14.5 oz each) Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 4 cups Chicken or Vegetable Broth
  • 8 oz Uncooked Lasagna Noodles, torn into pieces
  • 1 tbsp Italian Seasoning
  • 1 tsp Basil
  • 1 tsp Oregano
  • 1 cup Ricotta Cheese
  • 2 cups Mozzarella Cheese, shredded
  • Fresh Parsley or Basil, for garnish

Instructions

  1. Brown the ground meat in a skillet, crumbling it finely.
  2. Sauté the chopped onion and minced garlic in the same skillet until fragrant.
  3. Transfer the meat and sautéed vegetables to the crock pot.
  4. Add diced tomatoes, tomato paste, broth, and herbs.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. 30 minutes before serving, add uncooked pasta to the crock pot.
  7. Stir in the ricotta cheese before serving and top with mozzarella.

Notes

For added depth of flavor, sauté your garlic and onions before adding them to the crock pot. Avoid overcooking the pasta by adding it close to serving time.
