- Eggroll wrappers
- Spicy black beans (canned or cooked from scratch)
- Sharp cheddar cheese, shredded
- Green onions, sliced
- Bell peppers, diced
- Ground cumin
- Paprika
- Olive oil or cooking spray
Instructions
- Preheat the oven to 400°F (200°C).
- in a mixing bowl, combine spicy black beans, chopped bell peppers, shredded cheddar cheese, and sliced green onions. Add cumin and paprika to taste.
- Place an eggroll wrapper on a flat surface. Spoon about 2 tablespoons of filling onto the lower third of the wrapper.
- Fold the sides of the wrapper over the filling and roll it up tightly, sealing the edge with water.
- Place the rolled eggrolls on a parchment-lined baking sheet and brush or spray with olive oil.
- Bake for about 15-20 minutes, turning halfway through, until golden and crispy.
- Serve warm with your favorite dipping sauces.
