Ingredients

  • Eggroll wrappers
  • Spicy black beans (canned or cooked from scratch)
  • Sharp cheddar cheese, shredded
  • Green onions, sliced
  • Bell peppers, diced
  • Ground cumin
  • Paprika
  • Olive oil or cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. in a mixing bowl, combine spicy black beans, chopped bell peppers, shredded cheddar cheese, and sliced green onions. Add cumin and paprika to taste.
  3. Place an eggroll wrapper on a flat surface. Spoon about 2 tablespoons of filling onto the lower third of the wrapper.
  4. Fold the sides of the wrapper over the filling and roll it up tightly, sealing the edge with water.
  5. Place the rolled eggrolls on a parchment-lined baking sheet and brush or spray with olive oil.
  6. Bake for about 15-20 minutes, turning halfway through, until golden and crispy.
