- Cream Butter and Sugars: In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy—about 2-3 minutes.
- Add Egg and Vanilla: Mix in the egg and vanilla extract until just combined.
- Blend In the Coffee: Add the freshly brewed coffee, mixing well to incorporate.
- Sift Dry Ingredients: In a separate bowl, sift together the flour and baking powder.
- Combine Wet and Dry Ingredients: Gently fold the dry mixture into the wet mixture until just combined; avoid overmixing.
- Chill the Dough: Cover the dough and refrigerate for at least 30 minutes.
- Preheat and Shape: Preheat the oven to 350°F (175°C). Shape tablespoons of dough into balls and place them on lined baking sheets.
- Bake: Bake for 12-15 minutes until edges are golden, allowing the centers to remain soft.
- Cool and Enjoy: Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
