Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • 1/2 tsp salt
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 cup softened butter
  • 1 large egg
  • 2 tsp vanilla extract
  • Sprinkles or icing for decoration

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a cookie sheet with parchment paper.
  3. In a medium bowl, whisk together flour, nutmeg, cinnamon, ginger, and salt.
  4. In a large bowl, cream together the butter, brown sugar, and granulated sugar.
  5. Add the egg and vanilla extract and mix until smooth.
  6. Gradually blend in the dry ingredients until just combined.
  7. Optional: Chill the dough for 30 minutes.
  8. Scoop the dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
  9. Decorate with sprinkles if desired.
  10. Bake for 10-12 minutes until edges are golden but centers are soft.
  11. Let cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
