A heartwarming dish loaded with flavor, featuring sweet corn, sharp cheddar cheese, and fresh herbs, perfect for gatherings.

  • Total Time: 70 minutes
  • Yield: 8 servings

Ingredients

  • 2 cups fresh or frozen corn kernels
  • 1 cup sharp cheddar cheese, grated
  • 1 cup whole milk
  • 3 large eggs
  • 1/4 cup butter, melted
  • 1/4 cup fresh herbs (parsley, chives, or thyme), chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh corn, cut the kernels from the cob; if using frozen, thaw and drain moisture.
  3. In a mixing bowl, combine corn, cheddar cheese, milk, eggs, melted butter, and herbs. Season with salt and pepper, stirring until well combined.
  4. Grease a 9×13-inch baking dish and pour in the corn mixture, spreading it evenly.
  5. Bake for 45-55 minutes, or until the top is golden and set. A knife inserted in the center should come out clean.
  6. Allow to cool for a few minutes before serving.

Notes

For added flavor, consider sautéing onions or garlic before mixing them into the batter. Avoid overbaking to ensure a perfect texture.
