Ingredients
- 8 oz feta cheese, cubed
- 8 oz goat cheese, cubed
- 4 oz aged cheddar, cubed
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp red pepper flakes
- Salt to taste
- Optional add-ins: sun-dried tomatoes, olives, or roasted bell peppers
Instructions
- Cut your chosen cheese into bite-sized cubes.
- In a bowl, whisk together olive oil, red wine vinegar, minced garlic, and a pinch of salt. Add the fresh herbs and red pepper flakes.
- Layer the cheese in a dish, alternating with the marinade. Pour the remaining marinade over the top.
- Cover the dish and let it marinate in the fridge for at least two hours or overnight.
- Before serving, bring the dish to room temperature and provide toothpicks or small forks for guests.
Notes
Allowing the cheese to sit in the marinade is crucial for flavor development. Avoid overcrowding the dish for best results.
