A delightful tropical dessert with creamy coconut and ripe mangoes, showcasing the essence of summer.

Ingredients

  • 1 cup sago pearls
  • 4 cups water
  • 1 can (400 ml) coconut milk
  • ΒΌ cup sugar
  • A pinch of salt
  • 2-3 ripe mangoes

Instructions

  1. Rinse the sago pearls under cold water. In a pot, bring water to a boil, then add the sago pearls. Simmer for about 15 minutes until translucent.
  2. Drain and cool the sago pearls under cold water to stop cooking.
  3. Combine coconut milk, sugar, and salt in a saucepan over low heat, stirring until the sugar dissolves.
  4. In a mixing bowl, combine cooled sago pearls with the coconut sauce, taste and adjust sweetness if needed. Chill for at least an hour.
  5. Peel and slice the mangoes into thin slices.
  6. Serve the sago mixture in bowls topped with mango slices and garnish with mint or toasted coconut flakes.

Notes

For variations, try other tropical fruits like lychee or pineapple.
