Ingredients
- 1 cup sago pearls
- 4 cups water
- 1 can (400 ml) coconut milk
- ΒΌ cup sugar
- A pinch of salt
- 2-3 ripe mangoes
Instructions
- Rinse the sago pearls under cold water. In a pot, bring water to a boil, then add the sago pearls. Simmer for about 15 minutes until translucent.
- Drain and cool the sago pearls under cold water to stop cooking.
- Combine coconut milk, sugar, and salt in a saucepan over low heat, stirring until the sugar dissolves.
- In a mixing bowl, combine cooled sago pearls with the coconut sauce, taste and adjust sweetness if needed. Chill for at least an hour.
- Peel and slice the mangoes into thin slices.
- Serve the sago mixture in bowls topped with mango slices and garnish with mint or toasted coconut flakes.
Notes
For variations, try other tropical fruits like lychee or pineapple.
