Ingredients
- 1 cup ricotta cheese
- 1/2 cup mascarpone cheese
- 1 large egg
- 1 cup all-purpose flour (or almond flour for gluten-free)
- 1/2 cup slivered or chopped toasted almonds
- 1 tablespoon fresh thyme, basil, or parsley (chopped)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Toast the almonds in a skillet over medium heat, stirring until golden brown.
- In a large bowl, mix ricotta, mascarpone, and the egg until smooth, then gradually add flour, salt, and pepper. Fold in the almonds and herbs.
- On a floured surface, scoop and roll the dough into small balls, then flatten into pillow shapes.
- Heat olive oil in a skillet over medium heat and cook the pillows until golden brown on both sides, about 3-4 minutes each side.
- Drain on paper towels and sprinkle with sea salt or fresh herbs before serving.
Notes
For a nut-free option, replace almonds with sunflower or pumpkin seeds. Use dried herbs if fresh ones are unavailable. Don’t overcrowd the pan while cooking.
