Ingredients
- 1 Butternut Squash, cubed
- 1 lb Ground Turkey
- 3 cloves Garlic, minced
- 2 tbsp Olive Oil
- 1 tsp Fresh Rosemary, chopped
- Salt and Pepper to taste
- Optional: Fresh Thyme or Sage, Feta Cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise, remove the seeds, and slice into cubes.
- Toss the squash with olive oil, minced garlic, rosemary, and season with salt and pepper.
- Spread the seasoned squash on a baking sheet lined with parchment paper and roast for about 25-30 minutes, or until golden and tender.
- While the squash is roasting, heat a skillet over medium heat with a splash of olive oil.
- Sauté the ground turkey until browned, seasoning with salt, pepper, and additional herbs as desired.
- Once both components are cooked, gently fold the roasted squash into the skillet with the turkey.
- Garnish with fresh herbs and drizzle with balsamic glaze if desired.
Notes
Feel free to adapt the recipe by adding leafy greens or different cheeses for added nutrients and flavor.
