Ingredients

  • 1 Butternut Squash, cubed
  • 1 lb Ground Turkey
  • 3 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 1 tsp Fresh Rosemary, chopped
  • Salt and Pepper to taste
  • Optional: Fresh Thyme or Sage, Feta Cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise, remove the seeds, and slice into cubes.
  3. Toss the squash with olive oil, minced garlic, rosemary, and season with salt and pepper.
  4. Spread the seasoned squash on a baking sheet lined with parchment paper and roast for about 25-30 minutes, or until golden and tender.
  5. While the squash is roasting, heat a skillet over medium heat with a splash of olive oil.
  6. Sauté the ground turkey until browned, seasoning with salt, pepper, and additional herbs as desired.
  7. Once both components are cooked, gently fold the roasted squash into the skillet with the turkey.
  8. Garnish with fresh herbs and drizzle with balsamic glaze if desired.
