Ingredients
- 3 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cloves
- 1 cup molasses
- 1 teaspoon baking soda
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 8 oz cream cheese or butter for filling
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add in the egg and molasses, mixing until well incorporated.
- In another bowl, whisk together flour, ginger, cinnamon, cloves, and baking soda. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least two hours.
- Preheat your oven to 350°F (175°C). On a floured surface, roll the dough out to about 1/4 inch thickness. Use cookie cutters to shape your cookies.
- Place the cookies on lined baking sheets and bake for 8-10 minutes, or until they’re just set and lightly browned around the edges.
- In a bowl, beat together cream cheese (or butter), powdered sugar, and vanilla extract until smooth.
- Once cookies are completely cool, spread filling on the flat side of one cookie and gently press another cookie on top, creating a sandwich.
Notes
Chill the dough for better shaping and texture. Adjust baking time for cookie size.
