Ingredients
- 2 cups fresh cranberries (or frozen)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tablespoon orange zest
- 1/2 cup unsalted butter, cold and cubed
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Cold water as needed
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs, then add cold water as needed to form a dough. Chill for 30 minutes.
- In a medium saucepan, combine fresh cranberries, granulated sugar, brown sugar, orange zest, cinnamon, nutmeg, and salt. Cook over medium heat for about 10 minutes until the cranberries soften.
- In a separate bowl, whisk together eggs and then stir into the cranberry mixture.
- Roll out the chilled dough and fit half into a pie pan. Pour in the cranberry filling and cover with the remaining dough. Seal the edges and cut slits in the top crust.
- Bake for 45-50 minutes until the crust is golden and juices are bubbling.
- Let cool for at least 2 hours before serving.
Notes
Serve warm or at room temperature, preferably with vanilla ice cream or whipped cream.
