Ingredients
- 2 ½ cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup dark molasses
- 1 large egg
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, baking powder, ground ginger, ground cinnamon, and salt.
- Cream the softened butter and brown sugar until light and fluffy.
- Mix in the dark molasses and egg until combined.
- Gradually add the dry ingredients to the wet mixture to form a thick cookie dough.
- Chill the dough in the refrigerator for at least 30 minutes.
- Scoop tablespoon-sized portions onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, until edges are firm but centers are soft.
- Cool on the pan for a few minutes before transferring to a wire rack.
- Whip cream cheese, powdered sugar, and vanilla extract until smooth to make frosting.
- Spread frosting on the flat side of a cookie and sandwich with another cookie.
- Store in an airtight container.
