Ingredients

  • 2 ½ cups all-purpose flour

  • ¾ cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup dark molasses
  • 1 large egg
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, ground ginger, ground cinnamon, and salt.
  3. Cream the softened butter and brown sugar until light and fluffy.
  4. Mix in the dark molasses and egg until combined.
  5. Gradually add the dry ingredients to the wet mixture to form a thick cookie dough.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Scoop tablespoon-sized portions onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, until edges are firm but centers are soft.
  9. Cool on the pan for a few minutes before transferring to a wire rack.
  10. Whip cream cheese, powdered sugar, and vanilla extract until smooth to make frosting.
  11. Spread frosting on the flat side of a cookie and sandwich with another cookie.
  12. Store in an airtight container.
