Instructions
- Make the Dough: In a stand mixer, cream together the softened butter and sugar until light and fluffy. Add in the eggs and vanilla extract, mixing until combined. Gradually add the flour and baking powder, mixing until the dough forms.
- Chill the Dough: Divide the dough into two parts. Roll each portion between sheets of parchment paper into a rectangular shape. Chill in the refrigerator for at least 60 minutes or until firm.
- Add the Fillings: Spread your chosen filling evenly over each rectangle, leaving a small border around the edges.
- Roll It Up: Starting from one edge, carefully roll the dough into a log, keeping it tight.
- Slice the Cookies: Wrap the logs in parchment paper, chill for another 30 minutes. Preheat your oven to 350°F (175°C), then slice the logs into 1/2-inch rounds.
- Bake: Bake for about 10-12 minutes or until the edges are golden brown. Cool on the baking sheet for a few minutes before transferring to a wire rack.
- Enjoy: Drizzle melted chocolate or sprinkle powdered sugar on top once cooled.
