Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 7 ounces dark chocolate (70% cacao or more)
  • 1 cup heavy cream
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C). Combine flour, butter, and sugar until the dough resembles breadcrumbs. Press into a tart pan and poke holes with a fork. Bake for 15 minutes until golden brown, then cool completely.
  2. Melt dark chocolate and set aside. Whip heavy cream until soft peaks form, then fold into the chocolate.
  3. In another bowl, beat eggs and sugar until light and fluffy. Fold the egg mixture into the chocolate mixture and add peppermint extract.
  4. Pour mousse into the cooled crust and refrigerate for at least 4 hours or overnight to set.
  5. Garnish with whipped cream and crushed peppermint candies before serving.

Notes

Ensure ingredients are at room temperature for better blending. Do not rush cooling or chilling times.
