- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 7 ounces dark chocolate (70% cacao or more)
- 1 cup heavy cream
- 2 large eggs
- 1/4 cup granulated sugar
- 1 teaspoon peppermint extract
Instructions
- Preheat your oven to 350°F (175°C). Combine flour, butter, and sugar until the dough resembles breadcrumbs. Press into a tart pan and poke holes with a fork. Bake for 15 minutes until golden brown, then cool completely.
- Melt dark chocolate and set aside. Whip heavy cream until soft peaks form, then fold into the chocolate.
- In another bowl, beat eggs and sugar until light and fluffy. Fold the egg mixture into the chocolate mixture and add peppermint extract.
- Pour mousse into the cooled crust and refrigerate for at least 4 hours or overnight to set.
- Garnish with whipped cream and crushed peppermint candies before serving.

Ensure ingredients are at room temperature for better blending. Do not rush cooling or chilling times.
