Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • Chocolate for filling (dark, milk, or white)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in the egg yolk and vanilla extract.
  4. Gradually add the sifted flour and cocoa powder, mixing just until combined.
  5. Roll the dough into tablespoon-sized balls and place them on a lined baking sheet.
  6. Create an indentation in the center of each ball.
  7. Fill the indents with chocolate ganache or jam.
  8. Bake for 12-15 minutes until edges are set.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
