Ingredients

  • 2 cups cooked and mashed sweet potatoes
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp cloves
  • 1 ½ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, flour, and a bit of sugar. Mix until it resembles coarse crumbs.
  3. Press the mixture firmly into a greased baking dish.
  4. Bake the crust for about 15 minutes or until lightly golden.
  5. In another bowl, mix the cooked sweet potatoes, brown sugar, evaporated milk, eggs, vanilla, and spices until smooth.
  6. Pour the filling over the pre-baked crust and smooth it out gently.
  7. Bake for an additional 25–30 minutes until the filling is set and edges are lightly browned.
  8. Let the bars cool before cutting into squares and serving.

Notes

For easy slicing, cool the bars in the fridge for an hour after baking.
