Ingredients
- 2 cups cooked and mashed sweet potatoes
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 cup evaporated milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp cloves
- 1 ½ cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine softened butter, flour, and a bit of sugar. Mix until it resembles coarse crumbs.
- Press the mixture firmly into a greased baking dish.
- Bake the crust for about 15 minutes or until lightly golden.
- In another bowl, mix the cooked sweet potatoes, brown sugar, evaporated milk, eggs, vanilla, and spices until smooth.
- Pour the filling over the pre-baked crust and smooth it out gently.
- Bake for an additional 25–30 minutes until the filling is set and edges are lightly browned.
- Let the bars cool before cutting into squares and serving.
Notes
For easy slicing, cool the bars in the fridge for an hour after baking.
