- 4 large eggs (room temperature)
- 1 cup granulated sugar
- 1 cup cake flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter (melted)
- 1 tsp vanilla extract
- 1 cup dark chocolate (for the lava center)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your cake pan by greasing and flouring it.
- In a mixing bowl, whip egg whites until foamy. Gradually add a pinch of salt and sprinkle in granulated sugar while continuing to whip until stiff peaks form.
- In another bowl, sift together cake flour, baking powder, and a pinch of salt.
- Gently fold the dry mixture into the whipped egg whites in batches to maintain airiness.
- Pour half of the batter into the prepared pan and create a well in the center. Add melted chocolate and cover with remaining batter.
- Bake for 30-35 minutes until a toothpick comes out clean from edges but is still moist in center. Let cool before removing from the pan.
- Dust with powdered sugar and serve warm.
Notes
Ensure all mixing tools are clean for whipping egg whites to achieve maximum volume. Avoid overcrowding the oven during baking.
