  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

  • 2 cups fresh mushrooms (cremini or button), chopped
  • 8 oz cream cheese, softened
  • 2 cloves fresh garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil or butter
  • Pita chips or veggies for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt the olive oil or butter. Add chopped mushrooms and sauté for about 5-7 minutes until soft and golden. Season with salt.
  3. In a large mixing bowl, combine sautéed mushrooms with softened cream cheese, minced garlic, and half of the grated Parmesan. Mix until smooth.
  4. Fold in chopped parsley or herbs of your choice.
  5. Transfer the mixture into a baking dish and top with remaining Parmesan and extra herbs. Bake for 20-25 minutes, until bubbly and golden brown.
  6. Let cool for a few minutes before serving with pita chips or veggies.

Notes

For a lighter dip, substitute cream cheese with Greek yogurt. Experiment with different cheeses or add spinach for variation.
