Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup cold butter
- 1/4 cup ice water
- 4 ounces semi-sweet chocolate
- 1 cup granulated sugar
- 1/2 cup melted butter
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup shredded sweetened coconut
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the flour and a pinch of salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add the ice water, mixing until the dough holds together.
- Roll out the dough and fit it into a 9-inch pie plate. Prick the bottom with a fork to prevent puffing.
- Melt the semi-sweet chocolate and let it cool slightly.
- In a medium bowl, beat together the sugar, melted butter, and eggs until smooth.
- Stir in the melted chocolate, vanilla extract, shredded coconut, and chopped pecans.
- Pour the mixture into the prepared pie crust.
- Bake in the preheated oven for 35–40 minutes until the filling is set but the center is slightly soft.
- Allow to cool for at least 20 minutes before slicing.
Notes
Top with extra toasted pecans and coconut for presentation. Store leftovers in an airtight container in the refrigerator for 3–4 days.
