Ingredients
- 1 cup cornmeal
- 1 cup canned corn
- 1 cup creamed corn
- 2 eggs, beaten
- 1 cup milk or buttermilk
- 1/2 cup melted butter
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- Salt to taste
- Pepper to taste
- 1 tsp garlic powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cornmeal, canned corn, creamed corn, and melted butter. Mix well until combined.
- Add in the beaten eggs and milk or buttermilk, stirring until everything is well integrated.
- Sprinkle in the shredded cheese, along with salt, pepper, and garlic powder, and mix gently.
- Pour the mixture into a greased 8×8 inch baking dish and smooth out the top.
- Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Allow to rest for a few minutes before serving.
Notes
Avoid overmixing the batter to maintain a tender texture. Let it rest after baking for the best results.
