Ingredients
- 1 whole chicken (preferably organic, free-range)
- 1/2 cup pure maple syrup
- 1 cup fresh cranberries
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil or softened butter
- Salt and pepper, to taste
- 2 carrots, chopped
- 1 onion, quartered
- 2 potatoes, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken under cold water and pat it dry thoroughly with paper towels.
- Rub olive oil or softened butter all over the chicken, and season it generously with salt and pepper.
- In a small bowl, mix together maple syrup, minced garlic, rosemary, and thyme. Brush half of this mixture onto the chicken, reserving the rest.
- Place the chicken in a roasting pan and scatter cranberries, chopped vegetables, and the remaining glaze around it.
- Roast in the oven for about 75 minutes, basting with juices every 20 minutes.
- Check for doneness with a meat thermometer; it should reach at least 165°F (75°C) in the thickest part of the breast.
- Let the chicken rest for at least 15 minutes before carving.
- Serve with favorite sides and enjoy!
