Ingredients

  • 1 whole chicken (preferably organic, free-range)
  • 1/2 cup pure maple syrup
  • 1 cup fresh cranberries
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil or softened butter
  • Salt and pepper, to taste
  • 2 carrots, chopped
  • 1 onion, quartered
  • 2 potatoes, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat it dry thoroughly with paper towels.
  3. Rub olive oil or softened butter all over the chicken, and season it generously with salt and pepper.
  4. In a small bowl, mix together maple syrup, minced garlic, rosemary, and thyme. Brush half of this mixture onto the chicken, reserving the rest.
  5. Place the chicken in a roasting pan and scatter cranberries, chopped vegetables, and the remaining glaze around it.
  6. Roast in the oven for about 75 minutes, basting with juices every 20 minutes.
  7. Check for doneness with a meat thermometer; it should reach at least 165°F (75°C) in the thickest part of the breast.
  8. Let the chicken rest for at least 15 minutes before carving.
  9. Serve with favorite sides and enjoy!
