- 1 pound fresh green beans, trimmed and cut into bite-sized pieces
- 2 tablespoons unsalted butter
- 2 cloves garlic, chopped
- 1 small sweet onion, chopped
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup vegetable or chicken stock
- Zest and juice of 1 lemon
- Salt and pepper to taste
Instructions
- Prep the Beans: Trim the ends of the green beans and cut them into bite-sized pieces. Rinse under cold water and set aside.
- Sauté Aromatics: In a large skillet over medium heat, melt the unsalted butter. Add the chopped garlic and onion, stirring frequently until fragrant and onions are translucent.
- Add the Beans: Toss in the green beans with a pinch of salt. Stir to coat and cook for about 5-7 minutes until tender yet bright green.
- Incorporate Stock: Pour in the stock and cover the skillet for a few minutes to help the beans absorb the flavor.
- Season and Serve: After the stock has mostly evaporated, stir in red pepper flakes, lemon zest, and juice. Adjust seasoning with salt and pepper as needed.
- Finish with Butter: Stir in another tablespoon of butter for a glossy finish.
- Garnish and Enjoy: Add fresh herbs for garnish and serve warm.
