Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 pinch of salt
  • Colored hard candies, crushed

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
  3. Add the egg and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together flour and salt. Gradually incorporate this into the butter mixture until the dough is soft but manageable.
  5. Cover the dough and refrigerate for at least 30 minutes.
  6. Roll out the dough to about ¼ inch thick, and cut shapes with cookie cutters, cutting out the centers with a smaller cutter.
  7. Place crushed candies in the center of each cut-out cookie.
  8. Bake for 8-10 minutes or until the edges are slightly golden brown.
  9. Let cookies cool on the baking sheet before transferring them to a wire rack.

Notes

Ensure your butter is softened but not melted for the right texture. Don’t skimp on cooling time after baking.
