Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk or heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup crushed peppermint candy canes
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla until just combined.
- Fold in the crushed peppermint candy canes gently.
- Turn the dough onto a lightly floured surface and knead it just a couple of times.
- Roll out to about ½ inch thick and cut out biscuits with a cutter.
- Place biscuits on a baking sheet lined with parchment.
- Bake for about 12-15 minutes or until edges are lightly golden.
- Let cool before glazing or serving.
- Optional: Drizzle with a glaze made from powdered sugar, a splash of milk, and crushed peppermint.
Notes
For a gluten-free option, replace flour with a gluten-free blend. For dairy-free, substitute butter with coconut oil and milk with almond or oat milk.
