Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup cranberries (fresh or dried)
- 1 cup cream cheese
- 1/2 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar. Blend in the eggs one at a time, then stir in the vanilla extract until well combined.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry mix to the wet mixture, stirring just until combined. Fold in the cranberries and any additional chips if using.
- Pour the batter into the prepared pan and spread it evenly. Bake for about 25-30 minutes or until a toothpick comes out clean.
- Remove from the oven and let it cool completely in the pan on a wire rack.
- While the bars cool, blend the cream cheese with a bit of sugar and melted white chocolate until smooth. Spread this mixture over the cooled bars.
- Once frosted, cut into squares and sprinkle with additional cranberries if desired. Enjoy!
