Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup cranberries (fresh or dried)
  • 1 cup cream cheese
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar. Blend in the eggs one at a time, then stir in the vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the dry mix to the wet mixture, stirring just until combined. Fold in the cranberries and any additional chips if using.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for about 25-30 minutes or until a toothpick comes out clean.
  6. Remove from the oven and let it cool completely in the pan on a wire rack.
  7. While the bars cool, blend the cream cheese with a bit of sugar and melted white chocolate until smooth. Spread this mixture over the cooled bars.
  8. Once frosted, cut into squares and sprinkle with additional cranberries if desired. Enjoy!
