Ingredients
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ teaspoon salt
- 1 cup chocolate chips
- ½ cup crushed peppermint candy
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
- Melt the butter in a medium saucepan over low heat. Remove from heat and stir in the granulated sugar until well combined.
- Add eggs, one at a time, mixing well after each addition. Stir in vanilla and peppermint extracts.
- In a separate bowl, whisk flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in chocolate chips and crushed peppermint.
- Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let cool in the pan, lift out using the parchment, cut into squares, and sprinkle with extra crushed peppermint if desired.
Notes
Avoid overmixing the batter for the best texture. Allow brownies to cool before cutting.
