Ingredients

  • 8 oz Steak (flank or sirloin)
  • 1 Bell Pepper (red, yellow, or green)
  • 1 Onion (sweet)
  • 1 cup Shredded Cheese (Monterey Jack or Pepper Jack)
  • 4 Flour Tortillas
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1 Fresh Lime

Instructions

  1. Season the steak with spices and sear in a hot skillet until medium-rare. Let it rest before slicing.
  2. In the same skillet, add oil and sauté sliced bell peppers and onions until tender and caramelized, about 5-7 minutes.
  3. Lay a tortilla flat; sprinkle cheese, add steak and sautéed vegetables, then top with more cheese and another tortilla.
  4. Cook on medium heat in the skillet until golden brown and cheese melts, flipping carefully.
  5. Slice into wedges and serve with dipping sauce or salsa.

Notes

For a crispy exterior, use medium-high heat and a little oil. Don’t overload your quesadilla for easy flipping.
