Ingredients
- 8 oz Steak (flank or sirloin)
- 1 Bell Pepper (red, yellow, or green)
- 1 Onion (sweet)
- 1 cup Shredded Cheese (Monterey Jack or Pepper Jack)
- 4 Flour Tortillas
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1/2 tsp Garlic Powder
- 1 Fresh Lime
Instructions
- Season the steak with spices and sear in a hot skillet until medium-rare. Let it rest before slicing.
- In the same skillet, add oil and sauté sliced bell peppers and onions until tender and caramelized, about 5-7 minutes.
- Lay a tortilla flat; sprinkle cheese, add steak and sautéed vegetables, then top with more cheese and another tortilla.
- Cook on medium heat in the skillet until golden brown and cheese melts, flipping carefully.
- Slice into wedges and serve with dipping sauce or salsa.
Notes
For a crispy exterior, use medium-high heat and a little oil. Don’t overload your quesadilla for easy flipping.
