Ingredients

  • 4 bone-in chicken breasts or thighs
  • 4 cloves fresh garlic, minced
  • 2 tablespoons paprika
  • 1/4 cup brown sugar
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons soy sauce or Worcestershire sauce
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

Instructions

  1. In a mixing bowl, combine the garlic, paprika, brown sugar, olive oil, Dijon mustard, soy sauce, thyme, black pepper, and cayenne to form a marinade.
  2. Add the chicken pieces, coating them evenly, then cover and refrigerate for at least 120 minutes or overnight for maximum flavor.
  3. Prepare the grill for medium-high heat.
  4. Remove the chicken from the marinade and shake off excess. Place on the grill skin-side down and cook for about 20-25 minutes, flipping occasionally until the internal temperature reaches 165°F.
  5. In the last five minutes of grilling, brush on additional marinade for a sweet glaze.
  6. Remove from the grill and let it rest for about 10 minutes before serving.
  7. Serve with your favorite sides.
