Ingredients

  • 4 cups Bread Flour
  • 1 packet Active Dry Yeast
  • 1 ½ cups Warm Water
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Salt
  • ¼ cup Baking Soda
  • ¼ cup Melted Butter
  • Coarse Salt for sprinkling

Instructions

  1. Mix warm water, yeast, and brown sugar in a bowl. Let it sit for 5-10 minutes until frothy.
  2. In another bowl, whisk together the bread flour and salt. Pour in the yeast mixture and mix until a dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise in a warm spot until doubled in size (about 1 hour).
  5. Punch down the dough, divide into small pieces, and shape into bites.
  6. Boil a large pot of water, add baking soda, and boil pretzel bites for 30 seconds, flipping halfway.
  7. Place boiled bites on a parchment-lined baking sheet, brush with melted butter, and sprinkle with coarse salt.
  8. Bake at 425°F (220°C) for 12-15 minutes until golden brown.

Notes
