Warm and chewy ginger molasses cookies, perfect for fall and winter gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • Sugar for rolling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, sift together the flour, baking soda, ginger, cinnamon, and cloves.
  3. In a large bowl, cream the butter and brown sugar until light and fluffy.
  4. Mix in the molasses and egg until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until a unified dough forms.
  6. Scoop tablespoonfuls of dough, roll into balls, and optionally coat in sugar.
  7. Place on a parchment-lined baking sheet and bake for 8 to 10 minutes.
  8. Let cool for a minute before transferring to a wire rack.

Notes

Cookies will continue to firm up once out of the oven; do not over-bake.
