Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup molasses
- 1 large egg
- Sugar for rolling (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, sift together the flour, baking soda, ginger, cinnamon, and cloves.
- In a large bowl, cream the butter and brown sugar until light and fluffy.
- Mix in the molasses and egg until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until a unified dough forms.
- Scoop tablespoonfuls of dough, roll into balls, and optionally coat in sugar.
- Place on a parchment-lined baking sheet and bake for 8 to 10 minutes.
- Let cool for a minute before transferring to a wire rack.
Notes
Cookies will continue to firm up once out of the oven; do not over-bake.
