Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- A pinch of salt
- 1 cup freshly squeezed orange juice
- ½ cup unsalted butter, melted
- 2 large eggs
- Zest of 1 large orange
- 1 cup fresh cranberries (or dried if preferred)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the orange juice, melted butter, eggs, and orange zest.
- Make a well in the dry ingredients and pour in the wet mixture. Stir gently until just combined.
- Fold in the cranberries.
- Pour the batter into the loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For added flavor, mix in some chopped nuts or chocolate chips. Drizzle a simple orange glaze on top for extra sweetness.
