Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • A pinch of salt
  • 1 cup freshly squeezed orange juice
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • Zest of 1 large orange
  • 1 cup fresh cranberries (or dried if preferred)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, mix the orange juice, melted butter, eggs, and orange zest.
  5. Make a well in the dry ingredients and pour in the wet mixture. Stir gently until just combined.
  6. Fold in the cranberries.
  7. Pour the batter into the loaf pan and smooth the top.
  8. Bake for 55-65 minutes, or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
