Ingredients

  • 1 cup brown sugar
  • 3 tablespoons unsalted butter
  • 2 cups whole milk
  • 4 egg yolks
  • 2 tablespoons cornstarch

Instructions

  1. Melt the butter in a medium saucepan over medium heat until it bubbles slightly.
  2. Slowly stir in the brown sugar until combined and dissolved, for about 2-3 minutes.
  3. In a separate bowl, whisk together the whole milk, egg yolks, and cornstarch until smooth.
  4. Gradually pour the milk and egg yolk mixture into the saucepan, whisking constantly to create a smooth blend.
  5. Continue to whisk for about 5-10 minutes until the mixture thickens enough to coat the back of a spoon.
  6. Remove the saucepan from the heat and stir in the vanilla extract.
  7. Pour the pudding into individual cups or a large serving dish, cover with plastic wrap directly on the surface, and chill for at least 2 hours before serving.

Notes

To avoid lumps, whisk constantly while cooking. For added flavor, consider topping with whipped cream or crumbled cookies.
