- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 cup butterscotch chips

Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan or line it with parchment paper.
- Sift together the flour, baking powder, and baking soda in a bowl.
- Cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well, then add the vanilla extract.
- Gradually mix the dry ingredients into the butter mixture, alternating with milk if using.
- Fold in the butterscotch chips until evenly distributed.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
- Optionally, mix crushed nuts and leftover butterscotch chips for a crunchy topping before serving.
Notes
For a gluten-free option, use gluten-free flour. Store leftovers in an airtight container for up to three days or freeze for up to three months.
