Ingredients
- 2 ¼ cups all-purpose flour
- 1 cup brown sugar
- ½ cup unsalted butter, softened
- 1 cup butterscotch chips
- 1 tsp vanilla extract
- 2 large eggs
- 1 tsp baking soda
- ½ tsp salt
- 1 cup powdered sugar (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and sugars until light and fluffy.
- Add the eggs one at a time, mixing well, and then add the vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt, then mix into the wet mixture until combined.
- Fold in the butterscotch chips.
- Drop cookie dough onto parchment-lined baking sheets.
- Bake for 10-12 minutes until edges are golden but centers are soft.
- Cool on baking sheets for a few minutes before transferring to wire racks.
- For filling, beat softened butter with powdered sugar and a splash of vanilla until smooth. Spread between two cookies.
Notes
Chill the dough for 30 minutes if too sticky. Pair with vanilla ice cream or coffee.
