Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 cup brown sugar
  • ½ cup unsalted butter, softened
  • 1 cup butterscotch chips
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars until light and fluffy.
  3. Add the eggs one at a time, mixing well, and then add the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt, then mix into the wet mixture until combined.
  5. Fold in the butterscotch chips.
  6. Drop cookie dough onto parchment-lined baking sheets.
  7. Bake for 10-12 minutes until edges are golden but centers are soft.
  8. Cool on baking sheets for a few minutes before transferring to wire racks.
  9. For filling, beat softened butter with powdered sugar and a splash of vanilla until smooth. Spread between two cookies.
