- ¾ cup unsalted butter, softened
- 1 cup brown sugar
- ¼ cup unsulfured molasses
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground ginger

- Pinch of salt
- Powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add molasses and egg, mixing until smooth.
- In another bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Drop rounded tablespoons of dough onto a parchment-lined baking sheet and roll each ball in powdered sugar.
- Bake for 10-12 minutes or until edges are firm and centers are soft. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chilling the dough for about an hour can enhance texture. Avoid overmixing to ensure chewy cookies.
