- 1 cup caramel candies, unwrapped
- ½ cup heavy cream (optional)
- ¼ cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking soda, cream of tartar, and salt in a bowl.
- Cream together softened butter and vegetable shortening until fluffy.
- Mix in granulated sugar, then beat in the egg and vanilla extract until smooth.
- Gradually add the flour mixture to the wet ingredients and stir until just combined.
- Melt caramel candies with heavy cream over low heat until smooth.
- Portion out dough, flatten it, spoon caramel in the center, and seal the dough around it.
- Roll the cookie ball in a mixture of sugar and cinnamon.
- Bake on prepared sheets for 10-12 minutes or until golden around the edges.
- Cool on sheets for a few minutes before transferring to wire racks.
Notes
Avoid overmixing the dough to keep cookies soft. Chill dough if too warm before baking.
