Ingredients

  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup caramel candies, unwrapped
  • ½ cup heavy cream (optional)
  • ¼ cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, cream of tartar, and salt in a bowl.
  3. Cream together softened butter and vegetable shortening until fluffy.
  4. Mix in granulated sugar, then beat in the egg and vanilla extract until smooth.
  5. Gradually add the flour mixture to the wet ingredients and stir until just combined.
  6. Melt caramel candies with heavy cream over low heat until smooth.
  7. Portion out dough, flatten it, spoon caramel in the center, and seal the dough around it.
  8. Roll the cookie ball in a mixture of sugar and cinnamon.
  9. Bake on prepared sheets for 10-12 minutes or until golden around the edges.
  10. Cool on sheets for a few minutes before transferring to wire racks.
