A nostalgic chocolate poke cake filled with cherry goodness and topped with whipped cream.

Ingredients

  • 1 box chocolate cake mix
  • 3 eggs
  • 1 cup water (or coffee)
  • 1 can cherries in syrup
  • 1 cup whipped cream
  • Chocolate syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chocolate cake mix, eggs, and water (or coffee). Mix according to package instructions until combined. Pour the batter into a greased 9×13 inch baking dish.
  3. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for about 10 minutes.
  4. Once the cake has cooled, use the end of a wooden spoon to poke holes all over the surface, about 1 inch apart.
  5. Drain the cherries (if using canned) and reserve the syrup. Pour the syrup over the cake, allowing it to seep into the holes. Spoon cherries over the top of the cake.
  6. Whip heavy cream and sugar together until soft peaks form. Spread over the cake, covering cherries and filling.
  7. Top with chocolate syrup for an extra touch of decadence.
  8. Refrigerate for at least 2 hours before serving to let the flavors meld.

Notes

For extra cherry flavor, sprinkle some cherry juice over each slice before serving!
